It's an industrial kitchen. They find their way around food. Not excusing it, just saying you might not want to eat ANYWHERE that isn't your house, and you might not want to eat their either.

In Mel's we saw a cockroach crawl across food prep station. In Richters my wife had a small roach cooked into the bacon on her cheeseburger. Mind you Disney isn't perfect either. While (knock on wood) I've haven't been sick from the food at Universal. I've been sick twice at Disney. Once from what I suspect was a bad hot dog but I was the only one who got sick. However the first and last time we ate at the Grand Floridian my dad, mom, and I all got sick. My wife and sisters didn't but they didn't eat what we did.

For every bug you can see, there are a million more you can't. So I would chalk it up as it happens. That said, from what I recall Mel's is not anything to go out of your way for. Just typical at best Quick Service food with some American Graffiti atmosphere.

I get the grilled chicken salad, and I'm pretty sure it comes prepackaged so no worries there.

Seriously though roaches are everywhere, but if you want good roaches I would go to Monsters or Richter's

The window displays of the Universal Studios Store are getting changed, presumably to a holiday theme:
