Do I need to get and play the games to understand and appreciate the rides in your opinion? I barely have seen the movies for the other rides but I like them?
I would guess no. Most Nintendo games don't really have a strict continuity to understand them and I see this being no different.

I'm so happy I'm going to be living up there soon. I'll be able to watch this thing get built!

On a separate note - anyone know what the title of the piece of music they used in the video was? I really enjoyed it - very mystical and wonder inspiring.

Anyone else notice them referring to "Universal Orlando Resort" and not USF?

They usually just refer to Universal Orlando Resort for anything now a days. Kong's marketing was always "at Universal Orlando Resort." They barely stated "at Islands of Adventure." Just like Fallon, brand new ride at Universal Orlando not brand new ride at Universal Studios Florida.

Since the major thing we know is the attractions, can we start getting info on the food and shops. I mean thats the cash cow for Potter is the food.I don't think without Butterbeer it would be that much popular. The same situation happened with Simpsons with Flaming Moes and the Big Pink donuts. What can we expect from Nintendoland as the hot shops and food items?

The only thing I could think of is a pastry shop that makes power-up shaped stuff. Also potions, milk, etc. from Zelda.

Otherwise...

Don't forget magic wands - most people who go to Potter gotta have one...
I imagine we'll see some of those special candies from some of the games. Other than that I'm not sure... In terms of physical merch I imagine mushrooms or some interactive element is a must...

Worked late tonight and took a nap as soon as I got home, looks like I missed quite a bit D:

Those set peices in the background are nice, will be cool to see where those are used when the land is built (assuming those are for the land/attraction). Not too much info from this video, but feeling hyped none the less.

We don't exactly have confirmation on what the rides will be, though.

Yes, we have gotten the hints from the set that at least one of the attractions will be Mario-centered; with also the showing of Mario from the video, but it is still from sources that isn't Universal. While yes, the sources of those saying of Mario Kart, Donkey Kong and Yoshi's Island have been reliable; this is something to keep in mind.

I think when we get the next piece of information on Nintendoland for USH, UOR and USJ; it will be about at least one of the rumored attractions.

I'm thinking that while, yes; Physical (AND DIGITAL) merchandise will be the focal point, I think sweets, pastries and confectioneries may be the sign to look at for Nintendo food and drinks. Plus, it's not like there isn't a place for food at a high capacity as Nintendo will probably be next to Springfield and Cafe La Bamba.
